  1. Take 145 g Chicken, thighs, cubed
  2. Take 1 Tb Robertson's Red Thai Curry Cook-in-Sauce
  3. Prepare TT Salt and Pepper
  4. Get 1 Tb Vegetable oil
  5. Prepare 25 g Onion, finely chopped
  6. Take 135 ml (9 Tb) Coconut cream
  7. Take 60 ml (4 Tb) Indian style diced and peeled tomatoes, tinned

This quick and easy chicken curry is creamy, full of flavour and takes less than half an hour! The curry can be made without adding the yoghurt up to a day ahead. Reheat gently to serve and stir in the yoghurt. The curry also freezes well without the yoghurt.

Steps to make Quick Chicken Curry:
  1. Mix the chicken, Red Thai Curry Cook-in-Sauce, salt and vegetable oil in microwavable bowl. Stir to combine and microwave on high for 5 minutes, stirring halfway to ensure even cooking.
  2. Add the onions, coconut cream, and tomatoes into the bowl. Stir to combine, and microwave for 5 minutes on high. Stir halfway to combine and ensure even cooking.
  3. Adjust seasoning if needed. Best enjoyed with basmati rice but you can serve with your favourite starch. Enjoy.

Simply reheat as above when needed. Clean, wash and chop the chicken. Season with salt pepper and lemon juice - and set aside. Add all the paste ingredients to a food processor and blend until smooth. Heat oil in a saute pan large enough for the whole recipe.
